With a fire in the fireplace and a big pot of soup on the stove I’m feeling ready for fall. Then Jill at Blessed Beyond a Doubt said she was going to post all kinds of soup recipes and I decided to add one of our favorites – Potato Soup.
This soup recipe has special meaning to us since a dear friend made it for us when our son Eric had leukemia and friends were bringing us meals. It is ever so easy and warms up well. We usually make a big pot and have it with warm bread or rolls for several meals. Let me know what you think after you try it.
POTATO SOUP
3 + medium potatoes cubed
1-2 stalks celery chopped
1 onion chopped
2-3 grated carrots
4 cups water
4 cups chicken stock
2 tbs. butter
1 cup milk
2 Tbs. chopped parsley
1 cup Velveeta cheese
Dash pepper
Cubed ham
Cook potatoes, onion, celery, and carrots in water and
stock for about 45 minutes. Add cheese, butter,
parsley and ham.
Whenever I type a recipe to add to my box I put this Scripture at the bottom. Then when I take it out I’m reminded to pray for the person who gave it to me. Praying for you Kathy.

In keeping with the fall theme of this post I wanted to share how we make fire-starters to use in our fireplace, back yard bonfires, or camping. After I finished I saw in my mind’s eye how I should have taken photos of the process so you could see how quick and easy it is. Since I didn’t I found this website that did. It is very similar to how we did ours, other than we use sawdust rather than dryer lint since we chop our own wood and always have plenty of sawdust around. This way I don’t have to save dryer lint and it works well either way.
